The Westin Gurgaon, New Delhi has appointed Chef Marco Murenu as the new Italian Chef de Cuisine at Prego, the hotel’s specialty Italian dining outlet. Murenu first ran the kitchen at Prego for a brief stint in 2019 and rejoined the hotel for his second stint. He brings with him an exclusive gourmet experience from the island of Sardinia, which might as well be his hometown.

Murenu believes that even the simplest dishes take on a flavor profile when you have fresh ingredients, which he recommends using in all his creations. He grew up on a farm in a family of chefs and agriculturists, so a passion for food naturally ran in his blood.
Since Sardinia is along the Italian peninsula, seafood is the main ingredient. His menu reflects a rustic style of Italian cooking that strikes a flawless balance of authenticity complemented by wholesome fresh flavors. The menu is rooted in tradition using freshly-acquired produce with its innovative preparation methods.
