The culinary mystery of Rajasthan is out to mesmerize the foodies of Delhi-NCR at SAGA, Gurgaon, gearing up to host ‘Rangelo Rajasthan’ from 5th November to 20th November in association with Rajasthan Tourism.
Part of the Great Indian Platter initiative by SAGA; To be held every three months in an effort to promote India’s regional culture and cuisine, ‘Rangello Rajasthan’ will bring together the first chapter, regional cuisine and artisanal beverages, chef’s tasting menu and folk-fusion entertainment, alongside art exhibitions and puppet shows. Some royal cuisine from the land of Maharajas, ensures complete immersion in Rajasthani customs. Regions like Marwar to Mewar, Shekhawati to Hadoti and many more, the menu will have a wide range of some hidden and modern recipes from these regions.

Rajasthan is known for many things — majestic forts and forts, colorful handicrafts, vibrant culture, endless expanses of sand dunes and an impressive culinary tradition. Its rich heritage, like crafts and Rajasthani cuisine, reflects the glory of the traditional cuisine of Rajputana that was cooked by the Khansamas in the royal kitchens.

The 200-seat restaurant, SAGA, featuring grand interiors spread across 2 levels and alfresco, has been winning hearts since its inception for its innovative food offerings. The menu, designed by two-time Michelin-starred chef Atul Kochhar, maintains a global approach to plating and fusion while offering delicacies that enhance indigenous ingredients and traditions from India’s cuisine. Chef Kochhar, through this menu, has tried to showcase the confluence of dishes that have left a strong mark around the world due to its taste, flavor, ingredients or cooking techniques.

Dr. inaugurated the 15-day long cultural festival. Dhiraj Srivastava, Resident Commissioner, Government of Rajasthan who said, “This is just the beginning of SAGA’s beautiful initiative to promote various regional cuisines and cultures that have been lost to time. I am particularly excited for this as SAGA is well known for all things premium and their healthy approach to food and culture”.
Talking about the Rajasthani festival menu, Atul Kochhar, Chef Partner, SAGA said, “Saga Kush Koli is the head chef and I had to brainstorm for months to come up with this special menu. Rajasthani cuisine has been influenced by the lack of vegetation and water in the arid state. Each region of Rajasthan has its own trademark delicacy. Rajasthani cuisine, especially non-vegetarian food, has been greatly influenced by the lifestyle of its royal family – the Rajputs. Keeping everything in mind, we have created a menu that has everything from street style to ethnic, modern to homestyle and royal delights.”

From the vegetarian selection, indulge in the delights of Dal Bati Churma, Paneer ke Sule, Gatte ke Pulav, Rajasthani Kadi Kachodi, Papad ki Sabji while non-vegetarians can enjoy the rich flavors of Mathania Lal Mas, Murgh Bajre Ka Sweta. End your meal with a variety of sweets like Matka Kulfi, Moong Dal and Halua.

The event’s curtain raiser, on November 05, witnessed a lively performance by Jaipur-based Sufi rock fusion band – Swarag and will be attended by royals, dignitaries and food and cultural enthusiasts of the region.
